"It is between 854 and 859 that the monks from Saint-Sauveur-De-Redon receive several salt marshes on the Guérande peninsula.Today these salt mines are exploited by producers called paludiers. Their working techniques have changed little since the time of the monks. The seawater is allowed in the saline during strong tides. The seawater advances slowly by decanting, and is gradually concentrated in salt until reaching the final basins, called oeillets. In the oeillets, the concentration continues under the effect of the sun and the wind until saturation. Crystals of fine and light salts appear then and float in plates on the surface of the water, it is the flower of salt. The flower of salt is rare because the production is low. The flower of salt is "picked" with a specific instrument : the lousse. The flower of salt is used like fine salt, but its flavor is incomparable. Reflets De France advises you to add it just before serving your dishes. Its friable crystals, slightly humid, especially allow to appreciate it on meats, raw vegetables, boiled eggs."
